A cooking weekend!

Strawberries and pound cake. Can I hear a big ol’ YUM?

After a full week or more of not cooking, I made up for it Saturday. I was, in fact, a “cooking fool” much of the weekend.

Felt good.

The final toll:

  • A shrimp boil dinner Saturday night
  • Pickled asparagus
  • A loaf of apple fritter quick bread
  • A butter loaf pound cake, and macerated strawberries to go on top
  • Pre-cooks for Sunday dinner (see previous post) including getting the potatoes and beans ready to bake and the pork roast rubbed down and in the fridge

I meant to make granola, as I’m out, but I forgot. That’s for today.

Ohhhhhh, God. Just kill me now.

I'm pretty sure this was either illegal or immoral.

Surf and turf, balsamic truffle cream potatos, caprese salads, pound cake with strawberries and creme fraiche. Sweet Baby Jesus. I think I may explode.

If your dessert was better than mine, I don't want to know about it.

I also have smoked duck breasts in the fridge. The confit will go in the oven when I go to bed tonight, to cook very low all night and then into the fridge.

I love it when foodie friends come to visit.

We start the day with a trip to the bakery and the Farmers’ Market, followed by an impromptu breakfast picnic of tamales and coconut macaroons, in the national park by a creek.

Don’t knock it if you ain’t tried it.

Then there was lunch:

We don't NEED no STEENKIN' lettuce!

We did not have any lettuce. We did not care.

And then there was dinner, which was steak and lobster and garlic mashed potatos and a slab of tomato and a slab of mozzarella for my fifth, I think, caprese this week.

We do not have photos of that, because, well, it was just too good to wait long enough to take one. Not to mention the plating lacked something.

And then there was this:

New pound cake recipe. Good stuff.

And a bottle of Francis Ford Coppola Rosso with dinner, which followed a couple of Yuengling Lagers during the cooking process.

We are replete.

Holidays=Way too much food. But Lord, it was good!

Holidays=Way too much food. But Lord, it was good!

Why do I do it? Why do I eat way too damn much, even when I know that what I have on my plate is never going to fit in my stomach?

Well, I got close. I had a couple of bites of burger, and a little potato salad left. I polished off the rest of the burger (sans bun), a couple of ribs, a slice of brisket, and an ear of corn roasted on the grill. I am replete. And I haven’t gotten to dessert yet.
