Tomato and street corn pie. One of the greatest justifications for summer.

Yes, I am aware that according to the calendar, it is not yet summer. However, I am getting good tomatoes at the Farmers’ Market (and will get good ones out of my garden soon, as my plants are laden with green ones).

And the market had blackberries yesterday. And the grocery had decent looking sweet corn for Memorial Day last weekend.

That, of course, means only one thing. Well, only two things. Pie.

Pie times 2.25, to be precise, because I overprepared the filling for one of ’em. Not to be defeated, I cooked a little crustless version of it, along with its big brother and its sweet cousin.

And I am having, as soon as they cool down enough to eat, tomato and street corn pie, with blackberry cobbler and ice cream for dessert.

Don’t you ‘n y’mama ‘n ’em wish you were eating with me? Well, it’s going to take these sweethearts about 20 minutes to cool. The house looks like hell, but y’all come on!

If corn, okra and tomatos are the Holy Trinity of Southern cuisine, then I think I’m saved, sanctified, filled with the holy ghost and fixin’ to start speaking in tongues.

Can’t help it. There’s something about the bounty of fresh vegetables in the summer that brings out the rural Southerner in me, the one with the acre-and-a-half garden who never ate a vegetable nor a bite of meat that didn’t grow within a mile of home until she was half grown. Locavore, my ass; I was a locavore before anyone knew what one was, and would have probably looked askance at you had you called them one.

Fried okra. Fresh corn. Fresh tomatos. Purple hulled peas. Fried green tomatos. Fresh fruit, baked up into a clafouti.

It’s Saturday in a Southern town where they have a farmer’s market. And it’s a Fine Thing.

Back in the kitchen…

…After a weekend on the road. Somewhere around 800 miles in three days, and we came rolling in, hot and tired, ‘long about 10 last night. I wasn’t worth killing today, and may go to bed before dark tonight.

But I’ve acquired a 14-year-old male child, which is interesting because I don’t know anything about raising boys, albeit I’ll only have him for three or four weeks presuming his father gets better, which he seems to be doing. So I needed to feed the boy, something that has been causing me some anxiety, because what can I do to get this kid out of the rut of chicken strips and mac and cheese?

He said he’d eat lima beans. So I fixed lima beans. I’ve not seen the kid yet who wouldn’t eat whole-kernel corn. I was in a notion for salmon croquettes, so I put that on the menu. And to make sure I didn’t starve him, I DID fix homemade mac and cheese.
