When you need a kick-ass cake….

Is that pretty, or what? Fancy Bundt pant helps.

Because sometimes you need a kick-ass dessert, that doesn’t take an Act of Congress to accomplish.

Plus, this is the reason you should always have a box of butter-recipe cake mix in your pantry. I have now used mine. Must buy another, next grocery trip.

Ages ago, there was a “pound cake” recipe that was making the rounds. Not a true, dense pound cake, mind you, but a heavy, open-crumb, really moist pund cake that lent itself well to macerated fresh strawberries and all manner of other fresh fruit. It’s prety dang simple:

  • 1 box butter recipe cake mix
  • 1/2 cup sugar
  • 1/2 cup ap flour
  • 2/3 cup vegetable oil
  • 1 cup sour cream

Baked in a bundt pan or a couple of loaf pans at 325 or so for an hour or 75 minutes, this makes a fine base for a fruit shortcake, and it ain’t half bad out of hand for a midmorning snack with coffee. But if you want to kick it up a notich, add to the batter:

  • two peeled, cored and chopped medium sized Granny Smith apples. Three would not go amiss.
  • 1 cup caramel chips
  • 1 cup pecan or walnut pieces

Dump this all in a well-greased bundt pan and bake for about an hour and a half at 325F, or until a skewer somewhere near the middle comes out clean. invert onto a plate and cool completely.

That night, or the next day, glaze with:

  • a half-cup of half and half
  • a half-stick of butter
  • 1 cup of brown sugar
  • a couple of pinches of salt

Boil over medium low heat until somewhat thickened. Let cool a bit, and pour over cake.

Honey. Let me just tell you. This thing will Hurt You. You can easily eat Way Too Much of it. It’s sweet, but not so sweet it makes your teeth hurt. I might even leave out the extra sugar in the cake, especially given the caramel chips and the glaze.

Can I just tell you and y’mama ‘n ’em this is the best thing EVAH with your coffee in the morning. Make it!
