Treats for the nice (and a few naughty, too)

Not making these, but I thought the pic was cute.

It’s that time. It’s time to contemplate Christmas treatmaking. More to the point, it’s time to go shopping for the goodies with which to make the Christmas treats. And then package them up, arrange them in nice little boxes or baskets, and get them ready to give out in the next 10 days.

Gulp. Ten days. That’s…not long. Thank God I’ve got most of my other shopping done.

So what’s on the list this year?

  • Cranberry pepper jelly. Already made, sitting and waiting being added to baskets.
  • Pub cheese spread. Such a hit last year, I have to repeat it.
  • Pickled quail eggs and knockwurst. Got the knockwurst in the freezer. Must go to Memphis to the Asian market and buy them out of quail eggs.
  • Hot damn pickles. Easy. Buy a gallon of hamburger dills, dump the brine, add sugar and hot sauce, let marinate for a week, parcel out and can.
  • Pseudo Raincoast Crisp crackers. Bake cocktail loaves of a fruit-and-nut bread, freeze them, slice thin, bake up like biscotti.
  • Toffee.
  • Pralines.
  • Martha Washington candies (a powdered sugar/cream cheese/coconut/maraschino cherry filling, dipped in chocolate).
  • Peanut butter fudge (required by Child A).
  • Assorted cookies, including meringues, shortbreads, maybe macaroons, maybe filled.
  • Chex mix
  • Spiced nuts

None of those are tremendously labor-intensive to make, other than the Martha Washington candy and the cookies. Have to pick up a few things at Kroger today or this weekend so I can pitch into baking and candy-ing first thing Monday. Got to make a Sam’s run, too, as we are O-U-T, out, of laundry detergent and that’s a good place to get big bags of nuts.

Also have to firm up the menu for Christmas dinner this week. I need to get out there and see what kind of roasts I have in the freezer and if there’s one I can SV until it’s nice and tender and then sear in the oven, so’s to hopefully get some nice medium rare beef. Then I’ll make a brown gravy to go with that. Will have ham. Will have rolls. Will have asparagus, and likely Brussels sprouts. Will have sweet potatoes, mashed potatoes, mac and cheese, cranberry salad. That ought to do it.  Will likely make a coconut cake and ambrosia for dessert. Cheese, charcuterie, pickled things, nuts for apps.

Shouldn’t be a whole lot of a la minute prep for that one; should be able to stash most everything in the oven on warm, and pull it out when we’re ready to eat.

Will make pigs in blankets on Christmas morning for Child A and me. Because, well, pigs in blankets. No other reason necessary.

I also have caviar on hand for New Year’s Day. I’ll have tiny latkes, and sour cream, and caviar, and maybe make some beer candied bacon sometime this week while Child A is gone. And then I’ll cook turnip greens for her, and cabbage for me, and blackeyed peas for both of us, and that will be the name of THAT holiday.

And then I’ll go to the gym.

But right now, I’ll go to work. I’ve got projects to turn out, and I’ve fortified myself with a good breakfast, and you ‘n y’mama ‘n ’em are all situated with good ideas for Christmas treat making. My work here today is done.
